As my special thank-you to Chrissie for all her help on the nursery I am posting at her request the Dotter Family Cherry-O-Cream Cheese pie recipe from her Mother's Day visit. It is a long-time favorite in our family and super easy too! I love it and hope you all do as well!
Grandpa Dotter's Cherry-O-Cream Cheese Pie
Crust:
Ingredients:
Box Vanilla Wafers
1 Stick butter
1/2 tsp. Cinnamon
2 T. Sugar
Instructions:
-Crush 2/3 box vanilla wafers
-Melt the stick of butter
- Add melted butter, Cinnamon and Sugar to Crumbs
- Pour into pie pan and press out to form the crust.
- Chill
Filling:
Ingredients:
1 8oz package Cream Cheese (at Room Temperature)
1 15oz can Condensed Milk
1/3 c. Lemon Juice
1 tsp. Vanilla
Instructions: Mix well until no (or very few) lumps remain. Pour into Pie Shell. Chill.
Lemon Curd Topping:
Add this thin lemon layer on top of the pie after it is set (optional).
Ingredients:
2 T. Sugar
2 tsp. Corn starch (may take a bit more...)
dash of salt
2 T Lemon Juice (or a bit more)
Drop of yellow food coloring
Instructions: Heat until boiling and continue to cook until thickened. The color will shift to being translucent/clear from being more opaque when you started. Remove from heat and cool. Spread over the pie. Chill.
(Optional, but very good) Serve with Cherry pie filling that has been mixed with a couple drops of almond extract and a little cinnamon.
NOTE - This is a family recipe and therefore measurements tend toward inexact and slight deviation is fine and possibly expected as my Grandpa and I love to tinker with our recipes.
