We have had a busy weekend, and I'll post on some of it that later when I have pictures to share. (Hint, big step for B). For now, I've finally been successful in attempting to make pan fried fish and potato wedges. For some reason I always struggle with these. The breading falls off the fish or the potatoes get burnt (or are still hard inside). Yesterday, for once, they were both awesome! I owe this to the Bon Appetit November issues with it "Golden Pan-Fried Fish" and "Roasted Chips." I didn't quite follow the fish recipe to the letter as we didn't have an beer or ale around (just added some milk with the egg white) and used tilapia instead of halibut as that is what I found in the store. Also, no fresh parsley so went with dried (decrease amount by 2/3 to 1/2). We ate these with some microwaved frozen petit peas and watched OU win the Big 12 Championship. (Yipeee!) This made for a great, snuggly Saturday night.
I continue to struggle with my cold, but otherwise, I think everyone is well. We made a little progress on the Christmas shopping, but not very much really. Have got to figure that out least I be forced to shop in actual stores -- oh the horror. Still no Christmas tree either, but hopefully in the next week or so if we can borrow Erik's truck. This will be my last week of teaching for about a month so that will be nice, but have to get through all these papers first. Hope your weekend was wonderful and productive too.
