Slimmed Skillet-Style Lasagna from Easy Dinners Healthy Recipes
This is a recipe that is from one of the first cook books Zach and I bought together. This is one of our stand by recipes because it is simple and healthy. Only 235 calories per serving! Hooray!
Ingredients:
8 ounce uncooked ground turkey ( you can really use whatever kind of ground meat you want)
1/2 cup chopped onions
2 cups bottled spaghetti sauce
1 cup water
2 cups dried wide noodles - I use lasagna noodles that I break into pieces so they fit into the skillet and are basically bit size.
1 1/2 cups chopped zucchini
1/2 cup fat free ricotta cheese
2 tablespoons grated Parmesan or Romano cheese
1 tablespoon fresh parsley
1/2 cup shredded reduced fat mozzarella cheese
- I add some Italian Herb seasoning from Penzeys and some salt and pepper for extra flavor!
Instructions:
In a large skillet cook turkey and onion until it is browned. Drain off fat.
Stir in sauce and water. Bring to a boil.
Stir in uncooked noodles and zucchini, return to boiling; reduce heat. Cover and simmer for about 12 minutes or until noodles are tender, stir occasionally.
Meanwhile, in a small bowl stir together ricotta cheese, Parmesan or Romano cheese, and parsley.
Drop cheese mixture into 6 mounds over the turkey-noodle mixture in the skillet. Sprinkle mounds with mozzarella cheese.
Cover and cook on low heat for 4 to 5 minutes or until cheese mixture is heated through.
Let stand for 10 minutes before serving.
* It is super easy, quick, and not even that bad for you. I haven't made it since Zane has started eating table food, but I think I need to because it sounds like something he would love.
