During last week's "Ten on Tuesday" I hinted that perhaps Tracie or her Mom would share their family's fabulous sheet cake recipe and here it is! I hope you enjoy as I plan to!
"Chocolate Sheath Cake" from "Eckstrordinary Recipes; Recipes from the 1998 Henry Eck Family Reunion"

Daughter-in-law of Mabel
2 Cups of Flour 2 eggs
2 Cups of Sugar 1/2 cup of buttermilk
1/2 cup ( one stick) margarine 1 tsp. cinnamon
4 TBSP cocoa powder 1 tsp. soda
1 cup water 1 tsp. vanilla
1/2 cup shortening 1/4 tsp salt
Sift together the flour and sugar in a large mixing bowl; set aside. Put in saucepan: margarine, cocoa, water and shortening. Bring to a boil. Beat slightly and pour over flour mixture. Stir well. Add eggs, buttermilk, cinnamon, soda, vanilla and salt. Beat until smooth. Pour into a greased 17x11x3/4" pan. Bake at 350 to 375 for 20 to 25 minutes. 5 to 10 minutes before cake is done, start making the icing.
ICING:
1/2 cup margarine 1 lb of powdered sugar
4 TBSP cocoa powder 1 cup chopped nuts
6 TBSP milk 1 tsp vanilla
In saucepan, combine margarine, cocoa and milk. Bring to a boil and then remove from heat. Add powdered sugar, nuts and vanilla. Mix until smooth. Pour over hot cake as soon as it is removed from the oven.
