Sadly, we don't get to spend Easter with the Rouse gang this year, so instead I'm sharing this recipe from Brent's Mom and Grammie with you along with the sweet memories attached to it. So wonderful!
Cherry Torte
I would love to share a special recipe. Not one I make often, but holds lots of memories. Momma made it for special gatherings. It wasn't something we would find when we got home from school. I've never had it anyplace else or seen the recipe duplicated. I'm reading it from a card in Jamie's hand. She copied it to give one of her grade school teachers who was getting married. The kids were asked to bring recipes. On the last card she wrote: from Jamie Richards (recipe made by my Grammie).
Mix together -
1 1/2 cups sugar
1 cup flour
1tsp soda
1tsp cinnamon
1/2 cup chopped nuts
Add -
2 slightly beaten eggs
1 tsp melted butter
1 can well drained red sour cherries (save juice)
Bake at 350 for 45 min to 1 hour - until finished (her words)
Bake in 8" square pan
Cherry sauce -
1 cup cherry juice
1Tbsp cornstarch
1 cup sugar
1Tbsp butter
few drops of red food coloring
Cook on medium heat - stirring constantly until thick. Cool sauce to room temp.
Serve torte (cut in squares) with whipped cream and cherry sauce drizzled on top.
I have tried to double the recipe and use a 9 X 13 pan, but it doen't cook
correctly. If you double it, just use two 8" square pans.
This will satisfy your sweet tooth - 2 1/2 cups of sugar!!
It's good at room temp, but even better warmed.
The baking time seems a bit long, so I checked the original recipe. There were
two copies. One said 25 minutes (which doesn't seem long enough)
and the other said 45 minutes to 1 hour.
So......start the toothpick test at 25 minutes!
